Whether it's a chatbot, a time tracker, or a fitness app, these are all solid choices. The type of project you decide to build doesn't matter as much as you think it does. You can't come up with something that fits all the criteria and you keep going in circles. The project should be: fun, not too difficult, and not too easy, impress recruiters, look nice on your portfolio, cover every aspect of Node.js you want to practice, etc., etc.
